Why domain parking companies have really offshore IP's?

Always when I make a typo, I see that the parked domain is in Bahamas or Cayman Islands. Why these domain parking companies decide for having their servers or at least appear to have them in those "exotic" countries?

Well, as far I know, it's not necessary that domain parking websites have offshore servers, however, if you have found some of the domain parking websites hosted on offshore servers, it may be because they don't want to get into any trouble which may arise due to domain parking (there are many issues related to the domains) and they also need a benefit when it comes to search engine optimization.
